I would advise that during the winter months that the greens in your salad be used as more of a garnish. Leafy green vegetables tend to be cooling to the body, which make salads wonderful in the summer, but less satisfying in the fall and winter. Here is my favorite wintertime salad :
- Small handful of spinach
- Small handful of basil
- 1 tomato sliced
- 1 carrot chopped
- a handful of olives
- 1 handful of pine nuts
- 1/2 an avocado
- In a bowl add sliced tomato, chopped carrot, olives, pine nuts and avocado.
- Then rip the spinach and basil and sprinkle it over the vegetables.
- Cover with extra virgin olive oil (or a dressing you prefer)
This salad is particularly good in the winter because it contains a lot of raw fats. Don’t be afraid of fat! Your brain is 60% fat and that needs to be replenished daily for proper functioning. These raw fats will help your body eliminate fat stored along the wasteline. This may be a good way to get rid of that holiday weight or help with your new years resolutions!
