Raw Lasagna February 5, 2010

One of my favorite meals is raw lasagna.  I usually this dish on the weekends when I have more time, during the week I mostly consume smoothies, salads and apples with almond butter.

Ingredients:

  • 1 eggplant
  • Extra virgin olive oil
  • Pesto
  • 2 tomatos

First you will want to slice the eggplant, and soak the slices in EVOO.  You don’t want to slice it length-wise, slice it similar to the example below.

After the eggplant has soaked for at least 1 hour you can prepare the lasagna. First slice the tomatoes.  Then take a slice of eggplant and cover it with pesto, then layer on the tomato slices and top with another slice of eggplant.  You can layer them as high or as low as you want!

You can actually cut into it just as you would cooked lasagna.  Having soaked the eggplant in olive oil gives it a delicious buttery taste and makes it easier to digest.  Enjoy and feel free to comment!
